Superfood: Easy Cauliflower bake with veggies
The humble cauliflower has been under rated all our lives. This pretty veggie is now being used to make a lot of things, from Cauliflower rice, to Cauliflower Pizzas. Cauliflower kebabs, Cauliflower bake and so much more! Low in Carbs, it is an awesome vegetable that is low calories and high in fiber content.
My dear masala loving husband is not a huge fan of bland foods, so I usually end up putting a lot of spices to these traditionally bland(read less spicy) foods. This recipe needs just the basic foods available in your fridge and is so simple to throw together. I have prepared this to serve two people, and it was our primary meal with a side of salad, you may increase or decrease the quantity as you require.
Cooking time: 1 hour
Serves 2
Ingredients:
1/2 Kg Cauliflower
1/4th cup green peas
1/4th cup sweet corn
50 grams of french beans
1 Potato medium size
You may also add any vegetables that you want to add
For the sauce:
1 tablespoon Butter
1 tablespoon flour
1/2 cup of shredded cheese( You may use any mix of cheese you prefer, I used Parmesan and cheddar)
1/2 cup milk
1/2 cup water
2 fresh garlic pieces crushed
Fresh/ dried herbs
1 small onion finely chopped
Salt
1/2 spoon Pepper
1 spoon Chili flakes( avoid if you don't want it too hot)
Olive oil for greasing the pan
Method:
Wash and chop all the vegetables in bite size pieces. Make sure that the cauliflower, beans and potato are uniform in size. Steam the vegetables in a steamer. You can steam the potato first with the sweet corn as it takes the longest time.
The other vegetables won't take more than five minutes. Let them be just a bit firm and not too mushy.
While the veggies cook away, take some butter and onions in a pan. Over medium heat cook the onions until translucent along with the crushed garlic. Now once it is sufficiently cooked, switch off the gas and add the flour. Mix it well and make sure it does not become clumpy. Add a little milk and water and turn the gas back on. Alternatively add the milk and water to make a smooth consistency of a sauce. I am using water as the milk I buy has 5% fat and it is really creamy. If you are using low fat milk, you can avoid using water and use only one cup milk instead.
Stir in the cheese and let it cook for about 3-4 minutes. Stir in the salt, pepper, chili flakes and herbs until well combined.
In a baking dish, grease the bottom with Olive oil. Place the steamed vegetables evenly over the dish. Pour the sauce over the vegetables and cook in a pre heated oven for about 30 minutes at 180. Leave it uncovered so that you get a beautiful golden top crust.
Serve with your favorite side of salad.
P.S: I sometimes add 1/2 a spoon of garam masala/ Tandoori masala to the sauce, just to jazz up the flavor for the husband :)
